Fast And Flavorful: Blueberries And Banana Pancakes

Pancakes are one of those meals that everybody does differently, the recipes vary. You don’t need to use ours, but we made them many times before and everybody survived. Here’s a helpful live hack: you don’t need to be a great cook, just make sure your food will not make everybody sick.

But all jugs of jam aside. Breakfast is important and it is usually the meal that gets skipped the most. We know that your life is probably chaotic and complicated enough, so let’s keep the recipe as simple as possible.

First of all, get some ingredients:

  • 1 cup of flour
  • 2 tablespoons of sugar
  • 1 cup of milk
  • 1 egg
  • 1 ½ teaspoon of baking powder
  • 1 ½ teaspoon of salt
  • 1 banana (sliced it to semi thin slices)
  • ½ cup of blueberries
  • 1 spoon of butter

Useful tips:

  • Butter needs to melt but don’t burn it! Don’t wait until it is brown!
  • Speaking about butter, if you have a non-sticking pan, you don’t have to add it (unless you want that creamy flavor).
  • Watch the temperature: if it is too high you can burn your pancakes and if it is too low (low, low, low…any millennials here?), it will take at least 10 tik toks to watch until they are done. If you are not sure if the pan is ready, put a little drop of batter on a pan and see if it sizzles. If it does, the temperature is right.

Preparation

Add sugar, flour, baking powder, salt and mix it in a bowl. Take another bowl and whisk together egg and milk then add dry ingredients. Stir it up carefully until you get a texture similar to a cream but slightly more dense. If you use a traditional pan add butter, and wait for it to melt. Use medium heat. Pour a few spoons of batter to the pan, then put a few slices of banana and blueberries on top. Cook for 3 minutes on each side until they are golden.
