In an attempt to warm up one of the coldest months of the year, we’re coming at you with another comfort food recipe to keep the cozy vibes stirring. Put your Dutch oven to use with out favorite Taco Stew recipe and you’ll quickly smell the intoxicating aroma envelop all your senses. Take a shower, make a cocktail, or call your grandma while your delicious bowl of Mexican stew-madness easily transforms to an easy, oven fiesta! Sit back, relax, and let the Dutch Oven do its thing.
Prepare for a pun in the oven if you choose to use Vremi’s, "Dutch Ado About Oven" to create this chip-topped tasty dish. We know it’s corny, but adding any corn chip to top off each bowl will make this taco stew even more a-maize-ing. Throw it over a plate of chips to nacho-fy the creation or serve it in a bowl with fixins, fixins, and more fixins. It’s bound to be a stew-pendous outcome, so trust us, just stew-it.
[ingredients]- 5 carrots peeled and diced
- 4 potatoes peeled and diced
- 4 Russet Potatoes peeled and diced
- 1 pound of hamburger meat
- 2 onions chopped
- 1 package of frozen peas
- 1 can of Hunt's diced tomatoes
- 1 chopped fresh tomato
- 1 package of Old El Paso taco seasoning
- 1 can of chili beans (undrained)
- 1 can of corn (undrained)
- 1 can of chili beans (undrained)
- 1 can of white beans (undrained)
- 1 can of green beans (undrained)
- 1 can of kidney beans (undrained)
[preparation]
- Preheat oven to 325°F.
- Lightly coat the bottom of the Dutch oven with olive oil over medium heat. Throw in the chopped onions and cook them until tender, about 3 minutes. Then add the carrots, potatoes and enough water to cover the veggies. Cook the ingredients until tender.
- In another pan set to medium heat, cook the hamburger meat, drain the grease and add the entire veggy mixture.
- Add the drained meat and all other ingredients to the Dutch oven pan, and cook the entire thing with the lid on in the oven for one to one and a half hours.
- Serve with shredded cheese, guacamole, sour cream, and most importantly, top each serving with corn chips for an extra crunch!
